She was an actress, radio personality and quite well known food writer, as well as a friend of James Beard. He credits her with the idea of adding heavy cream to ground beef before you make hamburgers to work as a tenderizer, and championed her as a good writer and even better cook! I really want to purchase an original 1942 edition of her book, so it's exciting to see an actual recipe! I think using apricots would have made more of an impact, as suggested in the original recipe. They are more sharp and tart, plus canned apricots virtually disintegrate when mashed. I think the final product would be more "mousse-like" instead of speckled. But I so admire your adventures in culinary time travel.
